Over time, tea has waxed and waned in popularity, like many cultural interests. It is,
however, a testament to it's sustainability, that it has survived thousands of years
and still remains a staple in the diet of many cultures today. There are as many different
uses for tea as there are cultures that drink it.
With the growing popularity of tea drinking in Western society today, it will be very interesting to see how our culture
develops its tea "ceremonies". Like the popular explosion of specialty coffee, and the
culture grown around that, tea will continue to grow and specialize in the Western world
over the next 10 to 20 years. Will we iconify it like we have Starbucks coffee? Or will we adopt the
high-society rituals of the British? Only time will tell! In the meantime, as tea
grows in popularity, so does the research into its benefits and uses outside of a simple
